Cuisine and Culture – Tracing Andean Culture
From the mountains of Honduras to the plains of East Africa, join us for a culinary journey of people and culture through food. With an unbelievable lineup of esteemed Denver chefs, we fill our formal teaching kitchen with the smells and history of culinary practices from around the world. Through understanding food practices, we set the stage to explore family history and food traditions passed down from generation to generation. Our chefs share stories of their past while giving you a better understanding of the origin of so many of our favorite flavor profiles. Many of the fresh ingredients used in class are sourced from our very own CSA at Chatfield Farms. All courses include all ingredients and tastings in the course fee.
Chef Murdoch demonstrates a version of Andean quinoa soup to trace ingredient etymology and traditional uses as both sustenance and medicine. We discuss the weaponization and politicization of food along with how small movements on a large scale in all our communities can make an impactful shift. Andrea Murdoch is an Indigenous Andean from Venezuela and has a unique way of blending her ancestral foods with the traditional foods of North and Mesoamerica. As a transracial adoptee, Murdoch has utilized her ancestral foods as a way of reclaiming her culture. She showcases the expansive culture of Indigenous and Native peoples through our diverse cuisine and foodways.
